Menu Monday- More One Pot Recipes

orgjunkiempm1 Menu Monday  More One Pot Recipes You may of noticed I didn’t post last week for Menu Monday.

I have been battling dental pain for the last 10 days. I have to have a tooth or two pulled and we have to wait for a bad infection to clear before they go.

My menu has been basically soft food that are made in one pot.

Soups with crackers have been my mainstay and have scrambled eggs, and oatmeal.

This week I am trying to get back to some good food. We will see how it goes.

Monday- Slow Cooker Pot Roast with Veggies

Tuesday- Breakfast for dinner- Cheese Omelet

Wednesday- Left over Roast, Salad, Curried Rice

Thursday- Hamburger Skillet Supper

Friday- Chicken Noodle Soup ( dental surgery day)

Saturday- Split Pea Soup

Sunday- Best Crockpot Chicken

See this picture? This is how I have been cooking forever! Lots of pots and lots of mess. Well I wanted to challenge myself. I wanted to simplify my cooking. It is one of my goals for this year so how about joining me on my journey. From now on at least 4 meals a week will be cooked using ONE pot. Yes I said one pot! That is the goal. What pot am I going to use? For these meals I will be using my slow cooker or my large skillet,occasionally I might be using a baking pan or roaster, but each meal will take only one pan.

Want to help me on my journey? I need recipes to try. To use. To make. Send me your favorite one pot meal and you will be my new best friend. The goal is try new recipes each and every week. I will attempt to have 3 meals a week be new to my household. Who knows they might be a weekly favorite at your house.

So what is on the menu this week?

We still have left over turkey so I am using that up this week and trying a few vegetarian recipes as well.

Monday- Cran Turkey Enchiladas

Tuesday-Breakfast for Dinner- Easy Egg Skillet Dinner

Wednesday-Quick Skillet Lasagna-Substituting ham for cubed turkey

Thursday- Insanely Easy Vegetarian Chili ( being made by tween)

Friday- Leftovers

Saturday-Cheese Pizza and salad

Sunday- Marie’s Easy Slow Cooker Pot Roast

The other staple to most of these meals will be a small side salad. Roo and I both love salad so that will be a mainstay.

Monday- we ate out- pizza!

Saturday-Crockpot Chili

So you can see it is an easy week considering all the holidays ahead. Check back next Monday for last minute turkey ideas and for Eid recipes as well.  Menu Monday: Yummy Recipes with LinksIt is Monday and this week I wanted to plan some yummy menus this week.

I also got a load of meat from a local halal butcher that I found. The meat was all packaged in meal size bundles and I spent only $80 and got ( enough chicken for 10 meals, stew beef for 4 meals, liver for 2 meals, ground beef for 6 meals, and enough lamb chops for 4 meals.)I think spending only $80 for a month of meat is great. All I will buy later this month to supplement this is a turkey. Yes I am Canadian but we celebrate both American and Canadian holidays due to the fact I have an American Born daughter. So here is what is cooking here.

Monday- Dijon Lamb Chops, brown rice and carrots

Tuesday-Breakfast for dinner-Swiss Eggs, toast, tomatoes

Wednesday-Slow Cooker Beef Stew, rolls

Thursday-Skillet Lasagna, and salad

Friday-left overs

Saturday-Italian Meatballs, Crockpot Spaghetti Sauce, and pasta, Cesar salad

Sunday-Chicken and Rice Casserole, corn

 Menu Monday: Quick and Easy Cooking with a TweenI am a mom of a tween and this tween has decided she wants to learn to cook. So every dinner this week is simple enough for an 11 year old to make. She is helping me in the kitchen this week. What will be on the menu?

Monday-spaghetti and salad. This is being done with a basic tomato sauce that she gets to chop veggies for, and  she even as I type this right now is making homemade croutons for her salad.

Tuesday- Veggie Tortilla Lasgna. Roo loves lasgna so she wanted to this..

Wednesday-Roo loves Hamburgers so she wanted to learn these and she liked this video, so it will be burgers and fries.

Thursday-We also love Quesasdillas so it was a natural other choice.served with salad

Friday- will be a leftover day

Saturday-In honor of Halloween it will be Mummy Dogs , Booberry Shake

Sunday -I will be cooking as Roo counts her candy. So I’m making Moroccan Chicken Stew.

Menu Monday:Healthy and Frugal

 Menu Monday:Healthy and Frugal This past week I came out here on my blog that I want to be a fit, frugal faboulous 40 something mom.

How can I do this? My menus will be healthy and frugal and they will help me get to my goal.

So each Monday here, you can find what I will be cooking that will help me get to my goal. I just have to remember portion control!

For breakfasts my choices are: toast with peanut butter, and a banana, oatmeal and an orange, or boiled egg, toast and fruit.

For lunch they are: Toasted tomato sandwich with cheese, spinach salad with tuna, low sodium chicken noodle soup and crackers, veggie soup with crackers, hummus and crackers

For dinner:

Monday- Homemade chicken soup with veggies, and roll

Tuesday-Breakfast for dinner- eggs, toast, tomatoes

Wednesday-Chicken Amaretto, brown rice, brocolli

Thursday-Crock Pot Barbeque Chicken with Corn on Cob, rice.

Friday-cheese pizza, salad

Saturday-leftovers

Sunday-Tuna Supper Casserole

 Menu Monday  What to do with Turkey LeftoversFirst of all a very Happy Thanksgiving to my Canadian readers! This morning Roo and I continued a family tradition a long hike looking and collecting leaves. Right now she is in her room doing an art project with them. So time for me to plan what to do with all that left over turkey.

Here really we dont have much but I wanted to post some meals and recipes we have used when we have a fridge full of turkey.

1. Turkey Rice Bake-we like the cheddary taste to this one

2.Turkey Tetrazzini

3.Vegetable Turkey Curry

4.Mexican Turkey Soup

5. Turkey Cacciatore

Now what are we having  this week. Well Roo gets to go to the Tim Horton’s Camp in Tatamoughe Nova Scotia with about half her school for a few days so I will be on my own Tuesday and Wednesday.

 Menu Monday: Easy Frugal CookingThis week I have a super busy schedule. Our family celebrates Thanksgiving this week. We will be doing this on Friday and I will be making the desserts.  I wanted a really easy frugal menu. So here is what we are having in this house and all the recipes where found by reading your menus last week.

Tuesday-eggs, toast, tomatoes

Wednesday- Chicken Ceaser Pasta Salad

Thursday- Veggie Chili and rolls

Friday-Thanksgivng for our family hosted at my sisters house. I am bringing the pies Pumpkin and Apple.

Menu Monday: Halal Menu Planning

I am taking a halal approach to menu planning now. No longer you see pork options as well all meat is bought now from a farm that kill in very humane ways.. I think going halal will be good for me and Roo. I know it will be good on the budget.

Monday- whole roast chicken, baked potato, corn

Tuesday- spaghetti with meat sauce and salad

Wednesday- chicken soup, rolls

Thursday-breakfast for dinner(using leftover chicken from Monday)-eggs, tomatoes, toast

Friday- cheese pizza, salad

Saturday- lentils and rice

Sunday-slow cooker beef stew

Menu Monday-Summer Frugality

 Menu Monday Summer FrugalityWow, can’t beleive it is almost a week without a post from me. It was a busy week as it was the final week of school here, we had a high school graduation and compnay arrived from out west. Menu planning got thrown out the window.

Now that can’t last forever and we have to get back to reality.

With summer here we try and be frugal and I shop bulk. Ie 12 boxes of KD when on sale, coupon clipping, and always on the eye out for a good bargain. The reason for the frugality we want to have some summer fun!

Monday- Lentil and Brown Rice Casserole, side salad

Tuesday- Hot dogs, and smores

Wednesday- Happy Canada Day! Hamburgers, Salad,Oreo  strawberry shortcake

Thursday-Breakfast for dinner- eggs, tomato, toast

Friday- Barbeque Chicken, mashed potatoes, carrots

Saturday-HAPPY 4TH! 4th of July Clam chowder, Frosty Fireworks, Vanilla ice cream with strawberries

Sunday-leftovers

We are here in Canada and celebrate both Canada Day and Roo’s homeland the USA and its holiday- call it the best of both worlds. Now I am off to Laura’s to see what is cooking elsewhere this week.
