Menu Monday:Keeping it Simple

 Menu Monday:Keeping it Simple Well it is another Monday and I have to admit something here, I have been great at planning my meals out. That I have done. But recently with me now working evenings and weekends it has been harder to make them. Ever get like that?

So I wanted to do it simple this week especially now that I have really wacky exhausting hours at work.

So here is the plan for this week-

Monday-Spaghetti with meat sauce and green salad

Tuesday- Hotdogs and Fries, celery sticks

Wednesday-Breakfast for dinner: eggs, toast, tomatoes

Thursday-Barbecue chicken, baked potatoes, carrots

Friday- grilled cheese and soup

Satuday-pizza

Sunday-Roast, potatoes and carrots all done in crock pot.

Sounds easy, simple right? Lets see if this week I can stick to the plan. Now I am off to see what is cooking for you this Menu Monday.What do you cook when you need to keep it simple, fast and easy?

Menu Monday: Frugal Video Edition

 Menu Monday: Frugal Video EditionLast week we did rather well with sticking to our planned meals. Now with me starting to work from home I will starting at 5 pm here in the home office. So our big meal is being switched to lunch and we will have a lighter easier dinner Monday to Wednesday and on the weekends when I will be working alot I will be using my crock pot more, or relying on leftovers.

Monday-cant wait to try Esfijias (Arabic meat Pies) and salad

Tuesday-Chicken Enchiladas

Wednesday-Vegetable and Egg Casserole. Roo loves spinach so she should love this.

Thursday-Honey Mustard Ginger Chicken, rice and carrots

Friday- no video sorry we are having Pizza and salad

Saturday- Frugal Pot Roast, potatoes, carrots, celery

Sunday will be simple leftovers

orgjunkiempm11 Menu Monday: Great Easy Frugal RecipesWell it is another Monday so time to plan the weeks menu. Here is what is on the plan this week. All are frugal (which means cents left in my budget) and pretty easy by my standards.

Monday- Perogies, sourcream and a green salad. We do potato and cheese perogies.

Tuesday- Wanted to try a recipe Laura put on her plan last week. “Healthified” Mexican Pasta Skillet

Wednesday- Breakfast for Dinner: Scrambled eggs, toast, and tomatoes.

Thursday- Crock Pot BBQ Chicken, Rolls and a salad

Friday-Bean, Pasta and Roasted Pepper Soup, rolls

Saturday-Subway(using Buy 1 get 1 free coupon)

Sunday-Leftovers Buffet

Menu Monday- May 11th

 Menu Monday  May 11thWell it was a great mother’s day here. First my daughter made me breakfast- an omelet and toast. Roo, along with her classmates, complied some great recipes and made each mom a cookbook. what a great project! Then in the afternoon I made my mother dinner here at my house. I made one of her favorite meals : roast turkey, potatoes, peas and carrots.It was an enjoyable afternoon and it left me with plenty of leftover Turkey.

So here is the menu for this week:

Monday- Turkey Enchiladas

Tuesday-Breakfast for Dinner: eggs, toast and tomatoes

Wednesday-Spaghetti Pie

Thursday-Slow Cooker Thursday-Chicken Chili

Friday- pizza and salad

Saturday-grilled cheese and chicken noddle soup

Sunday-Bobby’s Goulash


Menu Monday: Frugal Favorites Part 2

 Menu Monday: Frugal Favorites Part 2 Several weeks ago I wrote out a list of some of our frugal favorite meals. They were easy, staples of our house. It has also become the most visited post on this blog, so for this week I wanted to do better in delivery of more frugal favorites. This time you get links to recipes. You also can find the original menu here.

Monday- we are starting off the week with Honey Mustard Curry Chicken from the original frugal favorites menu, it really is a favorite and you can find the recipe in the original post. It will be served with rice and a green salad.

Tuesday-we have breakfast for dinner and this week we are having cheese omelettes with tomatoes on the side

Wednesday-we are going to have Taco Soup with rolls

Thursday-Chicken Marrengo with rice

Friday-Left over night, this way there is no food waste

Saturday-Simply done: Roo loves grilled cheese and we are doing it with veggie soup that I got for $.33 cents a can.

Sunday-Vegetarian Pasta Bake

 Menu Monday: Frugal StyleBefore I get on with the menu of the week I missed participating last week because I was so sick, I am participating in the Ultimate Blog party and some hostess I am with being back and forth to emergency well it has been some 2 weeks. But thankfully I am on the mend, so this week I am using what is in the house, not shopping at all except for milk. So here is what is on the Menu:

Monday: Sweet Potato fries($1), and left over roast beef and left over salad from yesterday

Tuesday: Breakfast for dinner: Potato Panckes, sliced cucumber, and toast

Wednesday: grilled cheese sandwich’s(blocks were on sale last week) and mushroom soup

Thursday: Taco Salad( ground beef was on sale last week as well)

Friday: Chicken Pot Pie and salad

Saturday: Pizza and garlic fingers homemade style

Sunday: Whole Chicken roasted, with potato and carrots ( can you believe I got a whole one for $3.61)

Breakfasts are oatmeal with honey, waffles that I got for $1.00 a box on sale, cereal that I got for free(good couponing), and orange juice ( buy one get one).

Lunches are sandwichs, or raman noodles(fav of daughter), or leftovers. Desserts are Rice Krispie squares or fig bars(both were freebies because of $2 off coupons).

Menu Monday: Frugal Favorites

 Menu Monday: Frugal FavoritesThis week with ice storms and rain headed our way I simply wanted comfort food. Favorites of my daughter and me. So I’m sharing my favorite recipe, and as you can see the rest of the week is easy.

1. Honey Mustard Curry Chicken(* recipe to follow), rice, corn

2. Spaghetti and meat sauce, and garlic fingers, with side salad ( leftovers are for lunch).

3.Hotdogs and French fries

4. Breakfast for dinner – scrambled eggs, toasted bagels, and tomato

5. Pizza- Sobeys has these on sale this week here in the Maritimes

6. Grilled Cheese and Chicken Noddle( soup was $.50 a can).

7. Leftover Mania

Now for my Curry Honey Mustard Chicken. This recipe is the one that all my friends love when they come for dinner.

  • 2 TBS curry powder
  • 1/4 cup honey
  • 1/2 cup mustard
  • whole chicken cut into pieces.

Place chicken in glass baking dish, preheat oven to 375. Mix your 3 ingredients in bowl, you can add curry powder to taste. Bake in oven for 1 hr or if you want you can do this in the slow cooker too, where I leave it on low all day while I am at work. It is our family favorite, and it ain’t that expensive especially when you can get chicken on sale.

Menu Monday- Cleaning Out What I Have

Okay sometimes you need to get rid of the food you have in your house before you spend another dollar- that is where I am at right now! So with that said for the rest of the month I will only be buying eggs, milk and fresh fruit and veggies. I am cleaning out my freezer and pantry so I can clean them in time for spring.

So with that in mind here is my menu

Monday- spaghetti with meat sauce, salad, dessert- lemon cake with vanilla icing ( had company in)

Tuesday-eggs, bagels and tomato slices

Wednesday-bbq chicken breast, rice, carrots

Thursday- Veggie Soup and Grilled Cheese

Friday- Hotdogs and french fries, mixed frozen veggies

Saturday-cheese pizza, salad

Sunday- Shepard’s pie or leftovers

Menu Monday- The Easy Week

This week with the holidays fast approaching it will be a very busy week. There is the school Christmas Concert and  2 holiday parties! This is the week that we are out of the house the most before Christmas so I wanted to keep this week’s menu easy and quick!

Monday-Homemade Chicken Noodle Soup with Veggies and rolls( this is already in the crock pot)

Tuesday- Breakfast for dinner- eggs, toast, bacon, mango slices

Wednesday- chicken nuggets and french fries, corn

Thursday- Cowboy Pasta( made with TVP and hamburger) and salad

COWBOY PASTA
1 1b. ground beef (or like me half meat and half TVP)
1 onion, chopped
1 can ( 14.5 oz) Italian-style stewed tomatoes
1 cup Salsa

Dried Basil
Worcestershire sauce to taste
1 pkg wagon wheel pasta

1/2 cup of grated cheese

1.Brown meat and combine TVP and onions and basil and sauce

2. Cook pasta to directions

3.Combine in oven safe pan, top with the grated cheese, cover pan

4. Cook for 30 minutes, uncover for the last 10 minutes for a crispy cheese top
 

Friday-eating out -Party #1- I am bringing veggies and dip

Saturday-eating out-Party#2-I am making Shortbread Meltaways

Shortbread Meltaways

1 cup butter, softened
1/2 cup icing sugar
2 tsp. vanilla
1 3/4 cup flour
1/2 cup corn starch
3/4 tsp. baking powder
1/4 tsp. salt
1 cup Skor(or other chocolate bar) bits

Beat butter, icing sugar and vanilla. In separate bowl, combine dry ingredients. Stir half of dry ingredients into butter mixture. Stir in Skor bits and add remaining dry ingredients.

Roll into small balls. Bake at 350 for 15 minutes. Let cool for 5 minutes on pan. Dust with more icing sugar (if desired).

Sunday-roast( bought on sale for $5.49), carrots, potatoes, onions( all done in one pan and cooked on low while at church)

Menu Monday-Cooking with TVP

Well it is that time again, time to plan the menu and last week I picked up some TVP! What is TVP? Well we use it as a meat extender in this house but it is a soybean product that can boost protein eating in many dishes. So how will I use it, you will have to see my menu over the next couple of months to see( yes I have that much).

Monday- Tacos( we love Tacos and by using a mix of TVP and hamburger we can really stretch this).

Tuesday-Veggie Spaghetti  (slow cooker recipe) and Salad

Wednesday-Breakfast for Dinner-Cheese Omelet and Tomato Slices

Thursday-Hotdogs and French-fries and corn

Friday-we have been invited out

Saturday-cheese pizza(bought on sale for $3.99) and salad

Sunday-Roast Chicken, potatoes, carrots, corn( whole chickens are 2 for $10 at Food Basics).One of the ways I make this really flavorful is to add some sweet onion dressing to the chicken. Makes for a very yummy bird.

Christmas Tip–Have you started your Christmas baking yet? If not this is the week to get it out of the way..This week Roo and I will make sugar cookies  for her classes. The recipe we use is on the Kraft Website and we love it…
